The last two months have been quite hectic for me. I enrolled in a challenging certification program that has interactive classroom time, a ton of reading, and an exam at the end of each course. Because of the time constraints, and the fact that I'm constantly rushing to class or elsewhere, I've had to cut back on the number of posts I add to both of my blogs, and make a concerted effort to keep up my visits and commenting on other blogs. Also, I've had to find creative ways to prepare quick, healthy dishes that are tasty and easy to make. Today, I'll share a tasty dish I prepared: Brown Rice with a medley of mixed vegetables sauteed in olive oil and Teriyaki sauce. What made this dish a delight was the ease and speed it took to create it.

Vegetable Medley
Ingredients: 1/2 cup each of carrots, broccoli florets, cut asparagus, yellow and green squash, red pepper, sweet onion, mini corn, green snap peas, 1/2 teaspoon cold pressed olive oil, 1/2 teaspoon Teriyaki sauce.
In a frying pan, add 1/2 teaspoon of olive oil and Teriyaki sauce. heat on high and toss all the vegetables into the pan for a quick saute. Add a pinch of sea salt and pepper to taste. Saute about 3-5 minutes. add to steaming rice and serve. Enjoy!

ReplyDeletelooks really yum! thanks for sharing. i have been planning to buy olive oil for the longest time. and, oh, yes, i agree with the chop the veggies and put it on zip locks. that definitely saves time, that could come in handy for someone like me who's a SAHM and no househelp/yaya for my baby. i really have to do everything fast so i can focus more of my time for my little one. thanks for that! :-)
